Description

Walking Tacos are a fun and customizable meal, perfect for gatherings or family dinners.


Ingredients

Scale
  • 1 teaspoon olive oil
  • 1 pound lean ground beef
  • 1 1.25 ounce taco seasoning
  • 1/4 teaspoon pepper
  • 1 10 ounce can diced tomatoes with green chilis
  • 1 15 ounce can Ranch Style beans
  • 6 1 ounce packages corn chips
  • Shredded cheese
  • Sour cream
  • Sliced green onions, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook for 6 – 8 minutes or until no longer pink, breaking it into crumbles. Drain if necessary.
  3. Stir in the taco seasoning mix, pepper, diced tomatoes, and beans.
  4. Bring the mixture to a boil; simmer uncovered for 20 minutes or until it thickens, stirring occasionally.
  5. Just before serving, open the corn chip bags. Add the beef mixture and desired toppings. Serve immediately.

Notes

Keep the corn chips separate from the beef mixture to maintain their crunch. Reheat the beef mixture before serving again.
