Description

Delightful slow-cooked potatoes with a creamy, cheesy flavor that pairs well with any meal.


Ingredients

  • 2 lbs baby potatoes
  • 1 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash and halve the baby potatoes.
  2. Mix olive oil, Parmesan cheese, garlic, oregano, salt, and pepper in a bowl.
  3. Add the potatoes to the mixture and toss until well coated.
  4. Place the coated potatoes in the crockpot and cook on low for 240-300 minutes or until tender.
  5. Garnish with fresh parsley before serving.

Notes

Leftover potatoes can be stored in an airtight container in the refrigerator for up to three days. Reheat with a splash of olive oil.
