Description

Ingredients

  • 34 lb top round beef roast (room temperature)
  • 1 1/2 teaspoons fine sea salt
  • 1 tablespoon minced garlic
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cornstarch (optional for thickening)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef roast with salt, pepper, and minced garlic.
  3. In a large oven-safe pan, heat olive oil over medium-high heat and sear the roast on all sides until browned.
  4. Add the beef broth and Worcestershire sauce to the pan.
  5. Cover and roast in the oven for about 90 to 120 minutes, or until desired doneness.
  6. Remove the roast from the oven, cover, and let it rest.
  7. For the gravy, strain the liquid from the pan into a saucepan, adding cornstarch if desired to thicken.
  8. Serve the roast sliced with gravy drizzled on top.
