- Total Time: 60 minutes
- Yield: 12 servings 1x
- Diet: Vegetarian
Description
Delicious cookies filled with creamy vanilla custard and topped with rich chocolate glaze, inspired by the classic Boston Cream Pie.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup vanilla custard (for filling)
- 1/2 cup chocolate ganache (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the vanilla extract and milk, mixing until combined.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add to the wet mixture and mix until just combined.
- Drop tablespoon-sized dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 12 minutes or until cookies are set. Let them cool completely.
- Once cool, fill half the cookies with vanilla custard and sandwich with the other half.
- Drizzle or spread chocolate ganache on top of the cookies.
Notes
For a richer flavor, allow the ganache to set slightly before serving.
