Description

Delightful apple cider whoopie pies made with soft cookies and creamy filling, perfect for fall cravings.


Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup apple cider
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, cinnamon, and salt in a bowl.
  3. Mix together the apple cider, brown sugar, granulated sugar, oil, eggs, and vanilla extract until smooth in a separate bowl.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop spoonfuls of the batter onto the prepared baking sheet and bake for 10-12 minutes until lightly golden.
  6. Allow the cookies to cool completely.
  7. Assemble the whoopie pies by spreading filling between two cookies.
