Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, cinnamon, and salt in a bowl.
- Mix together the apple cider, brown sugar, granulated sugar, oil, eggs, and vanilla extract until smooth in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of the batter onto the prepared baking sheet and bake for 10-12 minutes until lightly golden.
- Allow the cookies to cool completely.
- Assemble the whoopie pies by spreading filling between two cookies.
