- 1 cup unsalted butter, softened
- 3½ cups granulated sugar, divided
- 3 cups all-purpose flour, divided
- ¼ teaspoon kosher salt
- 8 large eggs, room temperature
- 2 tablespoons lemon zest
- 1 cup fresh lemon juice
- Confectioners’ sugar, for dusting
- Garnish: lemon zest
Instructions
- Preheat the oven to 350°F (180°C). Line a 13×9-inch metal baking pan with parchment paper.
- Beat butter and ½ cup of granulated sugar in a stand mixer at medium speed until creamy, about 3 to 4 minutes.
- Whisk together 2 cups of flour and salt in a medium bowl. With the mixer on low speed, gradually add the flour mixture to the butter mixture, beating just until combined. Gather the dough into a ball and flatten it into a disk. Transfer the dough to the prepared pan, pressing it into the bottom.
- Bake until lightly browned, about 15 minutes. Remove from the oven and let it cool in the pan on a wire rack.
- Whisk together the eggs, lemon zest, lemon juice, and remaining 3 cups of granulated sugar in a large bowl. Add the remaining 1 cup of flour, whisking to combine.
- Pour the filling onto the prepared crust. Bake until set, about 25 to 30 minutes. Remove from the oven and let it cool completely. Refrigerate for at least 240 minutes or overnight before cutting into bars.
- Dust the bars with confectioners’ sugar and garnish with lemon zest, if desired.
Notes
Store in an airtight container in the refrigerator for up to 5 days. Can be frozen wrapped tightly for up to 3 months.
