Description

A vibrant pound cake combining rich flavors of butter, fresh strawberries, and crushed pineapple, perfect for gatherings or special occasions.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs, room temperature
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a bundt pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Combine the flour, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the butter mixture, alternating with the milk and vanilla extract.
  5. Fold in the crushed pineapple and chopped strawberries.
  6. Pour the cake batter into the prepared bundt pan and smooth the top.
  7. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
