Description

A delicious blend of crispy Brussels sprouts, savory bacon, and sweet maple syrup, all cooked on the stovetop for a quick and flavorful side dish.


Ingredients

  • 11.5 lb Brussels sprouts
  • 68 ounces thick-cut bacon
  • 23 tablespoons pure maple syrup
  • Optional: balsamic or apple cider vinegar, mustard, lemon, red pepper flakes

Instructions

  1. Trim and halve the Brussels sprouts; discard loose outer leaves.
  2. Cut bacon into 1/2–3/4-inch pieces.
  3. Measure maple syrup and acid at the ready.
  4. Heat the pan over medium and add bacon pieces, rendering until crisp and most fat is liquid (8–10 minutes).
  5. Remove crisp bacon and leave the fat in the pan.
  6. Add Brussels sprouts cut-side down in a single layer and sear without moving for 2–3 minutes.
  7. Flip sprouts to cook the other side until golden (5–8 minutes).
  8. Add a few tablespoons of water or stock, cover and steam for 3–4 minutes.
  9. Uncover, increase heat to evaporate moisture, then lower heat to medium-low.
  10. Stir in maple syrup and return bacon to the pan, reducing the syrup to a glaze (1–2 minutes).
  11. Finish with vinegar or lemon juice, salt to taste, and red pepper flakes.
  12. Transfer to a warm dish and enjoy.

Notes

Make sure to taste before salting, as bacon and maple will influence perceived saltiness.
