- 1 small cabbage, shredded
- 1 cup chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss chickpeas with olive oil, chili powder, salt, and pepper, then spread them on a baking sheet. Roast for 20-25 minutes until crispy.
- Combine shredded cabbage, honey, and lime juice in a large bowl, and toss to coat.
- Mix in the roasted chickpeas into the cabbage.
- Serve immediately, garnished with fresh cilantro.
Notes
For added flavor, try including sliced jalapeños or avocados. This dish can also be used as a filling for fish tacos or served over rice.
