Description

Tender lamb shanks cooked slowly to perfection, bathed in a rich herb-infused gravy.


Ingredients

Scale
  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef or lamb broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 carrots, chopped
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Season lamb shanks generously with salt and pepper.
  2. Heat olive oil in a skillet, brown lamb shanks on all sides, then transfer to slow cooker.
  3. Sauté onion and garlic in the skillet until translucent.
  4. Mix in broth, wine, tomato paste, chopped carrots, and herbs. Bring to a simmer.
  5. Pour the mixture over lamb shanks in the slow cooker.
  6. Cover and cook on low for 6-8 hours, or until the meat is tender.
  7. Serve with gravy.

Notes

For best results, let lamb shanks come to room temperature before cooking.
