Tender lamb shanks cooked slowly to perfection, bathed in a rich herb-infused gravy.
Ingredients

- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef or lamb broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 carrots, chopped
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper to taste
Instructions
- Season lamb shanks generously with salt and pepper.
- Heat olive oil in a skillet, brown lamb shanks on all sides, then transfer to slow cooker.
- Sauté onion and garlic in the skillet until translucent.
- Mix in broth, wine, tomato paste, chopped carrots, and herbs. Bring to a simmer.
- Pour the mixture over lamb shanks in the slow cooker.
- Cover and cook on low for 6-8 hours, or until the meat is tender.
- Serve with gravy.
Notes
For best results, let lamb shanks come to room temperature before cooking.
