Instructions

  1. Prepare the cinnamon swirl paste: In a small bowl, combine softened butter, brown sugar, and cinnamon until smooth.
  2. Whisk dry ingredients: In a large bowl, combine flour, baking powder, baking soda, salt, and sugar.
  3. Mix wet ingredients: In another bowl, whisk together buttermilk, egg, melted butter, and vanilla until blended.
  4. Combine and rest: Pour wet into dry ingredients and fold gently until combined. Let rest for 5-10 minutes.
  5. Heat the griddle: Preheat a lightly oiled griddle or non-stick skillet to medium (~350°F/175°C).
  6. Pour and swirl: Pour ¼ cup batter for each pancake; immediately drizzle with cinnamon swirl paste.
  7. First-side cook: Cook until bubbles form and edges are set, then flip.
  8. Finish and keep warm: Cook other side until golden; keep pancakes warm in a low oven.
  9. Make the cream cheese glaze: Beat cream cheese and butter until smooth, then gradually add powdered sugar and milk until drizzling consistency is achieved.

Notes

Batter resting improves texture. For a vegan version, use a flax egg and coconut oil.
