Instructions
- Prepare the cinnamon swirl paste: In a small bowl, combine softened butter, brown sugar, and cinnamon until smooth.
- Whisk dry ingredients: In a large bowl, combine flour, baking powder, baking soda, salt, and sugar.
- Mix wet ingredients: In another bowl, whisk together buttermilk, egg, melted butter, and vanilla until blended.
- Combine and rest: Pour wet into dry ingredients and fold gently until combined. Let rest for 5-10 minutes.
- Heat the griddle: Preheat a lightly oiled griddle or non-stick skillet to medium (~350°F/175°C).
- Pour and swirl: Pour ¼ cup batter for each pancake; immediately drizzle with cinnamon swirl paste.
- First-side cook: Cook until bubbles form and edges are set, then flip.
