Ingredients

  • 2 cups fresh strawberries, hulled and halved
  • 12 tablespoons honey or powdered sugar
  • 1 cup ricotta cheese
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Salt to taste
  • Bread for toasting (sourdough or your choice)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss strawberries with honey or powdered sugar and spread on a baking sheet.
  3. Roast for 15-20 minutes until caramelized.
  4. Whisk together ricotta, honey or maple syrup, vanilla, and salt until smooth.
  5. Toast bread until golden brown.
  6. Spread whipped ricotta on toast, top with strawberries, drizzle with syrup, and serve immediately.
