- 1.5 tbsp rice vinegar
- 1 tbsp sesame seeds
- Salt and pepper to taste
- Fresh herbs (optional)
Instructions
- Prepare your workspace and clear a counter.
- Select firm carrots, trim ends, and peel if necessary.
- Using a vegetable peeler, create long ribbons from the carrots.
- In a small bowl, whisk together olive oil, rice vinegar, salt, and pepper.
- In a large bowl, toss the carrot ribbons with the dressing and sesame seeds.
- Optionally, fold in fresh herbs for added flavor.
- Plate immediately and serve for best texture.
Notes
For best results, dress the salad just before serving. Ribbons can be prepared ahead but keep them dry.
