Instructions
- Prep your ingredients by gathering all items to ensure a smooth cooking process (5 minutes).
- Heat the cream and butter in a saucepan over medium heat until just simmering (5 minutes).
- Remove from heat, add chopped dark chocolate and vanilla extract, and stir until smooth (5 minutes).
- Gently fold in fresh raspberries without mashing (5 minutes).
- Refrigerate the mixture for about 2 hours until firm enough to scoop.
- Once firm, use a small ice cream scoop to portion out the mixture and roll into small balls (10 minutes).
- Coat each truffle in cocoa powder or crushed nuts and set on a parchment-lined baking sheet (5 minutes).
- Chill again for 15 minutes to set the coating before serving.
