Ingredients

  • 1/2 cup heavy cream
  • 1/2 tsp vanilla extract
  • 8 oz dark chocolate, chopped
  • 1/2 cup fresh raspberries
  • Cocoa powder or crushed nuts (for coating)

Instructions

  1. Prep your ingredients by gathering all items to ensure a smooth cooking process (5 minutes).
  2. Heat the cream and butter in a saucepan over medium heat until just simmering (5 minutes).
  3. Remove from heat, add chopped dark chocolate and vanilla extract, and stir until smooth (5 minutes).
  4. Gently fold in fresh raspberries without mashing (5 minutes).
  5. Refrigerate the mixture for about 2 hours until firm enough to scoop.
  6. Once firm, use a small ice cream scoop to portion out the mixture and roll into small balls (10 minutes).
  7. Coat each truffle in cocoa powder or crushed nuts and set on a parchment-lined baking sheet (5 minutes).
  8. Chill again for 15 minutes to set the coating before serving.
