Description

A guilt-free, velvety chocolate-peanut butter mousse made mostly from cottage cheese, blending creamy texture and rich flavor without excess sugar.


Ingredients

Scale
  • 450 g (2 cups) low-fat or full-fat cottage cheese
  • 120 g (1/2 cup) natural creamy peanut butter
  • 30 g (1/3 cup) unsweetened cocoa powder
  • 30 ml (2 tbsp) pure maple syrup or honey
  • 1 tsp (5 ml) vanilla extract
  • Pinch of fine salt
  • 3045 ml (2–3 tbsp) whole milk or any plant milk
  • 30 g (2 tbsp) dark chocolate chips or chopped dark chocolate for garnish

Instructions

  1. Chill the blender jar or bowl for 5–10 minutes.
  2. Blend cottage cheese until silky for 30–45 seconds.
  3. Add peanut butter, cocoa, maple syrup, vanilla, and salt; blend until homogeneous.
  4. Adjust texture with milk if too thick; blend until spoonable.
  5. Taste and adjust sweetness as needed.
  6. Divide mousse among serving glasses and garnish.
  7. Serve chilled or at room temperature.

Notes

For smoother texture, blend until completely silky or pass through a fine mesh sieve. Make ahead for up to 48 hours and add garnishes before serving.
