Scale
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, peeled and sliced

  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

  2. Combine graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of a greased 9×13 inch baking dish.

  5. Combine sliced peaches, brown sugar, cinnamon, and lemon juice in another bowl. Spread the peach mixture over the cheesecake layer.
  6. Bake for 30-35 minutes, or until set.
  7. Let cool, then refrigerate before cutting into bars. Serve chilled.

Notes

For added sweetness, top with whipped cream, caramel sauce, or serve with vanilla ice cream.
