- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1 cup sugar

- 2 large eggs

Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Cream together the softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add this to the wet mixture, mixing until just combined.
- Fold in the cottage cheese and diced peaches until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before removing from the pan. Serve warm or at room temperature.
Notes
Use ripe peaches for the best flavor. If fresh peaches are not available, you can use canned peaches, draining them well before use. For added richness, consider adding a pinch of nutmeg or almond extract.
