Description
A creamy and cozy casserole made with sweet potatoes, topped with either toasted marshmallows or a crunchy pecan crumble, perfect for holiday gatherings or weeknight dinners.

- 4–5 large sweet potatoes (~3 lbs), peeled and chopped
- 1/2 cup brown sugar
- 1/2 cup milk
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Pinch of salt
- 2 cups mini marshmallows or 1 cup pecan crumble
Instructions
- Prep & Peel: Start by peeling and chopping the sweet potatoes.
- Boil to Tender: Cook sweet potatoes in a large pot of boiling water for 15–20 minutes until tender.
- Mash for Consistency: Mash the cooked sweet potatoes until smooth.
- Mix the Base: Combine mashed sweet potatoes with brown sugar, milk, eggs, vanilla, cinnamon, and nutmeg.
- Preheat & Prepare Dish: Preheat oven to 350°F (175°C) and grease your baking dish.
- Add Topping: Spread marshmallows or pecan crumble on top of the sweet potato mixture.
- Bake: Bake in the oven for 25–30 minutes until the topping is golden brown.
- Rest & Serve: Allow to rest for 5–10 minutes before serving.
Notes
For added richness, brown the butter before mixing it in. Also, try adding a splash of citrus zest for extra brightness.
