Description

A creamy and cozy casserole made with sweet potatoes, topped with either toasted marshmallows or a crunchy pecan crumble, perfect for holiday gatherings or weeknight dinners.


Ingredients

  • 45 large sweet potatoes (~3 lbs), peeled and chopped
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Pinch of salt
  • 2 cups mini marshmallows or 1 cup pecan crumble

Instructions

  1. Prep & Peel: Start by peeling and chopping the sweet potatoes.
  2. Boil to Tender: Cook sweet potatoes in a large pot of boiling water for 15–20 minutes until tender.
  3. Mash for Consistency: Mash the cooked sweet potatoes until smooth.
  4. Mix the Base: Combine mashed sweet potatoes with brown sugar, milk, eggs, vanilla, cinnamon, and nutmeg.
  5. Preheat & Prepare Dish: Preheat oven to 350°F (175°C) and grease your baking dish.
  6. Add Topping: Spread marshmallows or pecan crumble on top of the sweet potato mixture.
  7. Bake: Bake in the oven for 25–30 minutes until the topping is golden brown.
  8. Rest & Serve: Allow to rest for 5–10 minutes before serving.

Notes

For added richness, brown the butter before mixing it in. Also, try adding a splash of citrus zest for extra brightness.
