Description

A foolproof family-friendly recipe for Malibu Chicken that combines crispy breading, ham, and melted cheese with a tangy sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour, seasoned
  • 2 large eggs
  • 1 cup Panko breadcrumbs, seasoned
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon yellow mustard
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • Oil for frying

Instructions

  1. Gather your ingredients and lay out three dredging stations: flour, egg wash, and Panko.
  2. Pound chicken to about 1/2 inch thickness.
  3. Dredge chicken in flour, then dip in the egg wash, followed by coating with Panko.
  4. Heat oil in a skillet over medium-high heat and fry each piece for 3-4 minutes per side until golden brown.
  5. Top each chicken piece with ham and cheese, cover the pan to melt the cheese for 1-2 minutes.
  6. In a bowl, whisk together mayonnaise, Dijon, yellow mustard, honey, and spices for the sauce.
  7. Serve immediately with sauce on the side or drizzled over the top.

Notes

For best results, avoid overcrowding the pan while frying. Use a thermometer to ensure chicken is cooked to 165°F.
