Description

A delightful twist on traditional lasagna, combining sweet potatoes, spinach, and ricotta cheese, topped with a sweet and tangy cranberry honey sauce.


Ingredients

  • 3 large sweet potatoes, sliced lengthwise into thin strips
  • 2 cups fresh spinach
  • 1.5 cups ricotta cheese
  • 1 cup walnuts
  • 1 cup cranberry honey sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Layer the sweet potato strips, followed by spinach and ricotta cheese in a baking dish. Repeat layers, finishing with sweet potatoes on top.
  3. Prepare the cranberry honey sauce by combining cranberry juice, honey, and walnuts in a saucepan and simmering until thickened.
  4. Pour the sauce over the lasagna before baking.
  5. Cover the dish with foil and bake for 30-40 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes until the top is golden.
  7. Let cool slightly before serving.

Notes

For best flavor, use fresh spinach. You can mix ricotta with mozzarella for a creamier texture.
