- 3 large sweet potatoes, sliced lengthwise into thin strips
- 2 cups fresh spinach
- 1.5 cups ricotta cheese
- 1 cup walnuts
- 1 cup cranberry honey sauce
Instructions
- Preheat the oven to 375°F (190°C).
- Layer the sweet potato strips, followed by spinach and ricotta cheese in a baking dish. Repeat layers, finishing with sweet potatoes on top.
- Prepare the cranberry honey sauce by combining cranberry juice, honey, and walnuts in a saucepan and simmering until thickened.
- Pour the sauce over the lasagna before baking.
- Cover the dish with foil and bake for 30-40 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the top is golden.
- Let cool slightly before serving.
Notes
For best flavor, use fresh spinach. You can mix ricotta with mozzarella for a creamier texture.
