Description

A delicious and hearty dish made with eggplant, ground beef or Italian sausage, and a blend of spices, perfect for family dinners or gatherings.


Ingredients

  • 2 large eggplants
  • 2 tbsp olive oil
  • 1 lb ground beef or Italian sausage

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the eggplants in half lengthwise and scoop out some of the flesh, reserving it for later.
  3. Brush the eggplant halves with olive oil and place them cut side up in a baking dish.
  4. Heat the remaining olive oil in a skillet over medium heat. Add the ground beef or Italian sausage and cook until browned.
  5. Chop the reserved eggplant flesh and add it to the skillet, cooking for a few more minutes.
  6. Stuff the eggplant halves with the meat mixture and bake in the preheated oven for 25-30 minutes until the eggplants are tender.
  7. Serve warm.

Notes

Choose firm and shiny eggplants for the best texture. You can experiment with different types of meat or add extra vegetables to the stuffing.
