- 2 large eggplants
- 2 tbsp olive oil
- 1 lb ground beef or Italian sausage
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the eggplants in half lengthwise and scoop out some of the flesh, reserving it for later.
- Brush the eggplant halves with olive oil and place them cut side up in a baking dish.
- Heat the remaining olive oil in a skillet over medium heat. Add the ground beef or Italian sausage and cook until browned.
- Chop the reserved eggplant flesh and add it to the skillet, cooking for a few more minutes.
- Stuff the eggplant halves with the meat mixture and bake in the preheated oven for 25-30 minutes until the eggplants are tender.
- Serve warm.
Notes
Choose firm and shiny eggplants for the best texture. You can experiment with different types of meat or add extra vegetables to the stuffing.
