  • 1 cup Broth (Vegetable or Chicken, low-sodium recommended)
  • 1 cup Cashews (Optional, soaked overnight for smooth blend)
  • 1 cup Ricotta (Optional, can substitute with cream cheese or mascarpone)
  • 2 tbsp Fresh Herbs (Parsley or chives, optional)
  • 1 tbsp Lemon Zest (Essential for brightness)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve some pasta water before draining.
  2. Heat olive oil in a skillet over medium-high heat. Add mushrooms and sauté for 5-7 minutes until golden brown.
  3. Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  4. Blend soaked cashews with vegetable broth until smooth or mix ricotta with sautéed mixture. Warm for 2-3 minutes.
  5. Add drained pasta into the skillet, tossing with the creamy mushroom mixture and adding reserved pasta water to achieve desired consistency.
  6. Plate the pasta, zest lemon over the top, and garnish with fresh herbs before serving.
