- 1 cup Cashews (Optional, soaked overnight for smooth blend)
- 1 cup Ricotta (Optional, can substitute with cream cheese or mascarpone)
- 2 tbsp Fresh Herbs (Parsley or chives, optional)
- 1 tbsp Lemon Zest (Essential for brightness)
Instructions
- Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve some pasta water before draining.
- Heat olive oil in a skillet over medium-high heat. Add mushrooms and sauté for 5-7 minutes until golden brown.
- Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Blend soaked cashews with vegetable broth until smooth or mix ricotta with sautéed mixture. Warm for 2-3 minutes.
- Add drained pasta into the skillet, tossing with the creamy mushroom mixture and adding reserved pasta water to achieve desired consistency.
- Plate the pasta, zest lemon over the top, and garnish with fresh herbs before serving.
