Description

A quick and budget-friendly dish featuring juicy sausages paired with colorful roasted vegetables and fluffy rice.


Ingredients

  • 4 sausages (Italian, chicken, or plant-based)
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)
  • 1 cup rice (brown or white)
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbs (thyme, oregano, basil)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss vegetables with olive oil, salt, pepper, and dried herbs on a large baking sheet.
  3. Place sausages on the baking sheet with the veggies.
  4. Roast for 25-30 minutes, until sausages are cooked through and vegetables are tender.
