Description

A refreshing salad that combines grilled shrimp, orzo pasta, and vibrant vegetables, all tossed in a zesty chili lime dressing.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 2 cups mixed greens (spinach, arugula, lettuce)
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a medium pot, bring salted water to a boil. Add orzo and cook according to package instructions until al dente. Drain and set aside, reserving 1/4 cup of pasta water for later.
  2. In a bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper. Adjust seasoning to your taste.
  3. Place peeled and deveined shrimp in a bowl, pour half of the dressing over them, and let them marinate while prepping the other ingredients.
  4. Preheat the grill or grill pan to medium heat. Grill the shrimp for about 3-4 minutes per side or until they turn pink and opaque.
  5. In a large bowl, combine the cooked orzo, mixed greens, diced bell pepper, red onion, cilantro, and avocado. Gently toss until combined.
  6. Add the grilled shrimp to your salad and drizzle with the remaining dressing. Toss everything together, ensuring even coating.
  7. Plate your beautiful salad and enjoy right away while the shrimp is warm!

Notes

You can substitute shrimp with grilled chicken or tofu for protein variation. Feel free to mix in seasonal vegetables as per your taste.
