- 1 pound chicken breast, cut into cubes
- 1 bell pepper, cut into chunks
- 1 onion, cut into chunks
- 1 zucchini, sliced
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Preheat the grill to medium-high heat.
- Mix olive oil, soy sauce, lemon juice, garlic powder, paprika, salt, and pepper to make the marinade.
- Add chicken cubes to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes.
- Thread the marinated chicken, bell pepper, onion, and zucchini onto skewers.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender.
- Serve warm.
Notes
For extra flavor, marinate the chicken overnight. Feel free to swap out vegetables based on preference.
