Ingredients

- 2 cups gluten free flour blend
- 1 tsp xanthan gum
- 1/2 tsp bicarbonate of soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 100g cold butter, chopped
- 3/4 cup light brown sugar
- 2 tbsp golden syrup
- 1 egg
- Piping icing for decoration
Instructions
- In a large mixing bowl, whisk together gluten free flour, xanthan gum, bicarbonate of soda, ground ginger, and cinnamon.
- Add chopped cold butter and rub into the dry mix until it resembles fine breadcrumbs.
- Stir in light brown sugar, then add golden syrup and egg, mixing until a smooth dough forms.
- Wrap the dough in cling film and refrigerate for at least 30 minutes.
- Preheat your oven to 180°C (350°F) and roll out the chilled dough to 5mm (1/4 inch) thickness.
- Use gingerbread men cookie cutters to cut out shapes and place them on a lined baking tray.
- Bake for 10-12 minutes until slightly browned at the edges.
- Cool on a wire rack before decorating with icing.
Notes
For best results, keep dough chilled and work quickly. Test one cookie first to dial oven timing.
