Description

A quick, easy, and flavorful Ginger Lime Chicken and Mushroom Soup that warms your soul with ginger, lime, chicken, and mushrooms.


Ingredients

Scale
  • 2 boneless chicken breasts
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 limes, juiced
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pot, sauté onion and garlic until translucent.
  2. Add ginger and chicken, brown on both sides.
  3. Stir in mushrooms, and cook for a few minutes.
  4. Pour in broth, boil, then simmer until chicken is cooked (20 mins).
  5. Shred chicken, add lime juice and soy sauce; season.
  6. Serve hot, garnished with cilantro.
