- 2 boneless chicken breasts
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
- 2 limes, juiced
- 4 cups chicken broth
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pot, sauté onion and garlic until translucent.
- Add ginger and chicken, brown on both sides.
- Stir in mushrooms, and cook for a few minutes.
- Pour in broth, boil, then simmer until chicken is cooked (20 mins).
- Shred chicken, add lime juice and soy sauce; season.
- Serve hot, garnished with cilantro.
