- 1 lb Italian sausage
- 1 can (15 oz) cannellini beans, drained
- 1 can (14.5 oz) diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 2 cups spinach or kale, chopped
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic; sauté until softened.
- Add Italian sausage and cook until browned.
- Stir in diced tomatoes, beans, broth, seasoning, red pepper, salt, and pepper.
- Bring to boil, reduce heat, and simmer for 15-20 minutes.
- Add greens just before serving.
- Adjust seasoning and serve hot.
