Description

A hearty Italian sausage and bean soup filled with rich flavors, perfect for quick weeknight dinners.


Ingredients

Scale
  • 1 lb Italian sausage
  • 1 can (15 oz) cannellini beans, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 2 cups spinach or kale, chopped
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic; sauté until softened.
  3. Add Italian sausage and cook until browned.
  4. Stir in diced tomatoes, beans, broth, seasoning, red pepper, salt, and pepper.
  5. Bring to boil, reduce heat, and simmer for 15-20 minutes.
  6. Add greens just before serving.
  7. Adjust seasoning and serve hot.
