Ingredients

- 1 cup dates, pitted
- 1 cup old-fashioned oats
- 1/2 cup peanut butter (or other nut butter)
- 2–3 tbsp honey (or maple syrup)
- 1/4 cup flaxseed
- 1 tsp vanilla extract
- Pinch of salt
- 1/2 cup chocolate chips (or other mix-ins)
Instructions
- Prep your dates by checking for pits and soaking hard dates in warm water for 10 minutes, then drain and pat dry.
- Add dates to a food processor and pulse until they form a sticky ball.
- Add oats, peanut butter, honey, flaxseed, vanilla, and salt. Process until the mixture holds together when squeezed.
- Pulse in chocolate chips or other mix-ins.
- Test by rolling a small portion into a ball; adjust if it’s too crumbly or sticky.
- Portion the mixture with a cookie scoop or tablespoon and roll into balls.
- Chill in the refrigerator for at least 30 minutes before serving.
