Description

Quick and nutritious energy bites that are easy to make, customizable, and perfect for snacks or meal prep.

Ingredients

Scale
  • 1 cup dates, pitted
  • 1 cup old-fashioned oats
  • 1/2 cup peanut butter (or other nut butter)
  • 23 tbsp honey (or maple syrup)
  • 1/4 cup flaxseed
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup chocolate chips (or other mix-ins)

Instructions

  1. Prep your dates by checking for pits and soaking hard dates in warm water for 10 minutes, then drain and pat dry.
  2. Add dates to a food processor and pulse until they form a sticky ball.
  3. Add oats, peanut butter, honey, flaxseed, vanilla, and salt. Process until the mixture holds together when squeezed.
  4. Pulse in chocolate chips or other mix-ins.
  5. Test by rolling a small portion into a ball; adjust if it’s too crumbly or sticky.
  6. Portion the mixture with a cookie scoop or tablespoon and roll into balls.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Experiment with different nut butters and add-ins for customized flavors.
