Description

A creamy and delicious quiche featuring ricotta and spinach, perfect for brunch or a light dinner.


Ingredients

  • 1 pre-made pie crust
  • 3 large eggs
  • 1 cup ricotta cheese
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted.
  3. In a bowl, whisk together eggs, milk, ricotta cheese, Parmesan cheese, salt, pepper, and nutmeg.
  4. Stir in the sautéed spinach.
  5. Pour the mixture into the pie crust.
  6. Bake in the preheated oven for 30-35 minutes until set and golden.
  7. Allow to cool slightly before serving.

Notes

Feel free to customize with other vegetables or cheeses. Make it dairy-free by using non-dairy milk and tofu.
