Description

A delicious and healthy Eggplant Lasagna recipe that is easy to prepare and perfect for family dinners or gatherings.


Ingredients

Scale
  • 2 large eggplants
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp fresh basil, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants, sprinkle with salt, let sit, rinse, and pat dry.
  3. Sauté garlic in olive oil, add marinara sauce, and simmer.
  4. Mix ricotta, egg, oregano, basil, salt, and pepper.
  5. Layer the mixture in baking dish and bake covered for 30 minutes, then uncover for an additional 15 minutes.
  6. Cool before serving.

Notes

For a gluten-free option, ensure that the marinara sauce is gluten-free. Customize with seasonal vegetables or herbs as desired.
