Ingredients

- 2 large eggplants
- 2 tbsp olive oil
- Salt & pepper, to taste
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 cups marinara sauce
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp fresh basil, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Slice eggplants, sprinkle with salt, let sit, rinse, and pat dry.
- Sauté garlic in olive oil, add marinara sauce, and simmer.
- Mix ricotta, egg, oregano, basil, salt, and pepper.
- Layer the mixture in baking dish and bake covered for 30 minutes, then uncover for an additional 15 minutes.
- Cool before serving.
Notes
For a gluten-free option, ensure that the marinara sauce is gluten-free. Customize with seasonal vegetables or herbs as desired.
