Ingredients

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 cup chicken broth
  • 4 chicken breasts (boneless, skinless)
  • 1/2 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
  2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until golden brown on both sides and fully cooked. Remove from the skillet and set aside.
  4. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer and let cook for a few minutes.
  5. Stir in the remaining butter until melted, then return chicken to the skillet, spooning sauce over the top.
  6. Garnish with fresh parsley and serve.

Notes

For a lighter option, substitute chicken with fish. Ensure the skillet is hot for a better sear.
