Ingredients

- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 cup chicken broth
- 4 chicken breasts (boneless, skinless)
- 1/2 cup all-purpose flour
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until golden brown on both sides and fully cooked. Remove from the skillet and set aside.
- In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer and let cook for a few minutes.
- Stir in the remaining butter until melted, then return chicken to the skillet, spooning sauce over the top.
- Garnish with fresh parsley and serve.
Notes
For a lighter option, substitute chicken with fish. Ensure the skillet is hot for a better sear.
