Description

A delicious and simple casserole using fresh zucchini, perfect for weeknights or potlucks.


Ingredients

  • 1/2 cup chopped onion
  • 1 Tbsp olive oil or butter
  • 1/2 tsp garlic powder
  • 2 cups sliced zucchini
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup breadcrumbs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp Italian seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat the olive oil or butter in a skillet over medium heat. Add the chopped onion and sauté until translucent.
  3. Stir in garlic powder, salt, pepper, and Italian seasoning.
  4. Combine the sliced zucchini, sautéed onion mixture, shredded cheese, and breadcrumbs in a large bowl. Mix well.
  5. Pour the mixture into a greased casserole dish.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the zucchini is tender.
  7. Let it cool for a few minutes before serving.

Notes

Use fresh, young zucchini for best results. Feel free to experiment with different cheeses or add other vegetables.
