A delicious and simple casserole using fresh zucchini, perfect for weeknights or potlucks.
Ingredients

- 1/2 cup chopped onion
- 1 Tbsp olive oil or butter
- 1/2 tsp garlic powder
- 2 cups sliced zucchini
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup breadcrumbs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp Italian seasoning
Instructions
- Preheat the oven to 350°F (175°C).
- Heat the olive oil or butter in a skillet over medium heat. Add the chopped onion and sauté until translucent.
- Stir in garlic powder, salt, pepper, and Italian seasoning.
- Combine the sliced zucchini, sautéed onion mixture, shredded cheese, and breadcrumbs in a large bowl. Mix well.
- Pour the mixture into a greased casserole dish.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the zucchini is tender.
- Let it cool for a few minutes before serving.
Notes
Use fresh, young zucchini for best results. Feel free to experiment with different cheeses or add other vegetables.
