- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 2 large eggs
- 1/2 cup melted butter (cooled slightly)
- 1 cup buttermilk
- 1/4 cup orange juice
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 1 1/2 cups chopped dates
- Optional: 1/2 cup chopped nuts or chocolate chips
- Optional: Turbinado sugar for topping
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin tin with non-stick spray or paper liners.
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, whisk the eggs, then add melted butter, buttermilk, orange juice, orange zest, and vanilla extract. Whisk until combined.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
- Fold in the chopped dates and optional nuts or chips.
- Fill each muffin cup about two-thirds full and sprinkle with turbinado sugar if desired.
- Bake for 18-22 minutes, or until golden brown and a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack. Optionally, drizzle with orange glaze once cooled.
Notes
For a lighter muffin, use yogurt instead of buttermilk and try adding cardamom for an extra flavor dimension.
