Description

Bright orange zest and caramel-like dates combine for a tender muffin that’s both nostalgic and healthy.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup melted butter (cooled slightly)
  • 1 cup buttermilk
  • 1/4 cup orange juice
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1 1/2 cups chopped dates
  • Optional: 1/2 cup chopped nuts or chocolate chips
  • Optional: Turbinado sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin tin with non-stick spray or paper liners.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, whisk the eggs, then add melted butter, buttermilk, orange juice, orange zest, and vanilla extract. Whisk until combined.
  4. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  5. Fold in the chopped dates and optional nuts or chips.
  6. Fill each muffin cup about two-thirds full and sprinkle with turbinado sugar if desired.
  7. Bake for 18-22 minutes, or until golden brown and a toothpick comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack. Optionally, drizzle with orange glaze once cooled.

Notes

For a lighter muffin, use yogurt instead of buttermilk and try adding cardamom for an extra flavor dimension.
