Description

A quick and flavorful Creamy Spicy Beef & Poblano Pasta Skillet, perfect for busy weeknights and guaranteed to please the whole family.


Ingredients

  • 8 oz pasta (penne or bowtie)
  • 1 lb ground beef (or ground chicken/turkey)
  • 1 poblano pepper, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil
  • Parmesan cheese for serving
  • Chopped cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente, drain, and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened and fragrant.
  3. Add ground beef and cook until browned. Drain excess fat if necessary.
  4. Stir in diced poblano pepper, paprika, cumin, salt, and pepper. Cook until the pepper is tender.
  5. Pour in beef broth and bring to a simmer. Reduce heat and mix in heavy cream.
  6. Add the cooked pasta to the skillet and stir until combined. If needed, add reserved pasta water for desired consistency.
  7. Serve topped with Parmesan cheese and chopped cilantro.

Notes

For a lighter version, substitute ground beef with lentils or mushrooms. Store leftovers in an airtight container in the refrigerator for up to 3 days.
