- 8 oz pasta (penne or bowtie)
- 1 lb ground beef (or ground chicken/turkey)
- 1 poblano pepper, diced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup heavy cream
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil
- Parmesan cheese for serving
- Chopped cilantro for garnish
Instructions
- Cook the pasta according to package instructions until al dente, drain, and set aside.
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened and fragrant.
- Add ground beef and cook until browned. Drain excess fat if necessary.
- Stir in diced poblano pepper, paprika, cumin, salt, and pepper. Cook until the pepper is tender.
- Pour in beef broth and bring to a simmer. Reduce heat and mix in heavy cream.
- Add the cooked pasta to the skillet and stir until combined. If needed, add reserved pasta water for desired consistency.
- Serve topped with Parmesan cheese and chopped cilantro.
Notes
For a lighter version, substitute ground beef with lentils or mushrooms. Store leftovers in an airtight container in the refrigerator for up to 3 days.
