Description

Delightful creamy lemon cheesecake bars with a crumbly crust, perfect for sunny days and gatherings.


Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 cup cream cheese
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together flour, sugar, and salt in a bowl. Add softened butter and mix until crumbly.
  3. Press half of this mixture into the bottom of a greased pan to form the crust.
  4. Beat cream cheese in another bowl until smooth. Add eggs, lemon juice, lemon zest, and vanilla extract. Mix until combined.
  5. Pour the cream cheese mixture over the crust in the pan.
  6. Sprinkle the remaining crumb mixture on top of the cream cheese layer.
  7. Bake for 30-35 minutes or until golden.
  8. Allow to cool, then cut into bars and serve.

Notes

For extra indulgence, dust with powdered sugar or serve with whipped cream.
