- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 cup cream cheese
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- Mix together flour, sugar, and salt in a bowl. Add softened butter and mix until crumbly.
- Press half of this mixture into the bottom of a greased pan to form the crust.
- Beat cream cheese in another bowl until smooth. Add eggs, lemon juice, lemon zest, and vanilla extract. Mix until combined.
- Pour the cream cheese mixture over the crust in the pan.
- Sprinkle the remaining crumb mixture on top of the cream cheese layer.
- Bake for 30-35 minutes or until golden.
- Allow to cool, then cut into bars and serve.
Notes
For extra indulgence, dust with powdered sugar or serve with whipped cream.
