Description

A comforting and quick-to-make Creamy Cod Casserole topped with crispy potato chips, perfect for busy weeknights.


Ingredients

  • 2 cups cooked cod fillets, flaked
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup frozen peas
  • 1 cup cooked rice
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup crushed potato chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine flaked cod, sour cream, mayonnaise, frozen peas, cooked rice, lemon juice, garlic powder, salt, and pepper.
  3. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  4. Sprinkle shredded cheddar cheese evenly over the top, then layer the crushed potato chips.
  5. Bake for 25-30 minutes until bubbly and cheese is melted. Check for a golden brown finish.
  6. Remove from the oven and let it rest for a few minutes before serving.

Notes

For a healthier twist, substitute sour cream with Greek yogurt and mayonnaise with avocado mayo.
