- 2 cups cooked cod fillets, flaked
- 1 cup sour cream
- 1 cup mayonnaise
- 1 cup frozen peas
- 1 cup cooked rice
- 1 teaspoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup crushed potato chips
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine flaked cod, sour cream, mayonnaise, frozen peas, cooked rice, lemon juice, garlic powder, salt, and pepper.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle shredded cheddar cheese evenly over the top, then layer the crushed potato chips.
- Bake for 25-30 minutes until bubbly and cheese is melted. Check for a golden brown finish.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
For a healthier twist, substitute sour cream with Greek yogurt and mayonnaise with avocado mayo.
