Description

A delicious and nutritious salad combining chickpeas and avocado, perfect as a side dish or light meal.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 1 small red onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Combine the chickpeas, diced avocado, red onion, bell pepper, cherry tomatoes, and cilantro in a large mixing bowl.
  2. Squeeze the lime juice over the salad and season with salt and pepper.
  3. Gently toss everything together until well combined.
  4. Serve immediately or chill in the refrigerator before serving.

Notes
