Ingredients

  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 4 chicken breasts
  • 1 cup blackberries
  • 4 oz goat cheese
  • 1/2 cup heavy cream
  • 1 tbsp fresh thyme

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the chicken breasts and sear until golden on both sides.
  5. Combine blackberries, goat cheese, heavy cream, and thyme in a bowl.
  6. Spread the blackberry mixture over the chicken in the skillet.
