Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach leaves, chopped
  • 1/2 cup dried cranberries
  • 4 oz goat cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine chopped spinach, dried cranberries, and goat cheese in a mixing bowl.
  3. Cut a pocket in each chicken breast and stuff with the spinach and cranberry mixture.
  4. Season the chicken with salt and pepper.
  5. Heat olive oil in a skillet and sear the chicken breasts until golden on each side.
  6. Transfer the chicken to a baking dish and bake for 25-30 minutes until fully cooked.
