- 8 oz Brie cheese, sliced
- 1 cup cranberry sauce
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Pat chicken breasts dry and pound to an even thickness (about 1/2 inch).
- Carefully cut a pocket in each chicken breast without cutting through.
- Season chicken inside and out with salt and pepper.
- Stuff each pocket with slices of Brie and a spoonful of cranberry sauce.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes on each side until golden.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until internal temperature reaches 160°F (74°C).
- Let rest for 5 minutes before serving.
