Ingredients

- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 large bell peppers
- 1 cup cooked crab meat
- 1 cup cooked shrimp, chopped
- 1 cup cooked rice
- 1 teaspoon Old Bay seasoning
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until softened.
- Combine crab meat, shrimp, cooked rice, Old Bay seasoning, and sautéed onion and garlic in a large bowl. Season with salt and pepper.
- Cut the tops off the bell peppers and remove the seeds.
- Stuff each pepper with the seafood mixture and place them in a baking dish.
- Sprinkle shredded cheese on top of each stuffed pepper, if desired.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes or until the peppers are tender and the cheese is bubbly.
- Serve warm.
Notes
Leftovers can be stored in an airtight container in the refrigerator and should be consumed within 3-4 days. Reheat in the oven or microwave.
