Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, rinsed and drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, diced
  • 1 avocado, diced
  • 1/2 cup cilantro, chopped
  • Juice of 2 limes
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Combine black beans, corn, red bell pepper, green bell pepper, cherry tomatoes, red onion, avocado, and cilantro in a large bowl.
  2. Whisk together lime juice, cumin, salt, and pepper in a separate bowl.
  3. Pour the dressing over the bean and vegetable mixture and toss to combine.
  4. Serve with tortilla chips for dipping.
