- 1 lb Italian sausage, crumbled
- 2 tbsp olive oil
- 1 medium onion, diced
- 2–3 cloves garlic, minced
- 4 cups potatoes, diced (Yukon Gold or Russet)
- 2 cups chicken or vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- 2 cups kale or spinach, chopped
- Salt and pepper to taste
- Grated Parmesan for serving
Instructions
- Prep the ingredients: Chop onion, mince garlic, and dice potatoes.
- Heat olive oil in a large pot over medium heat. Add crumbled sausage and cook until browned and crispy.
- Add onions and sauté until translucent, then add garlic and cook for an additional minute.
- Stir in the diced potatoes and sauté for about 5 minutes.
- Pour in the broth, add thyme and oregano, bring to a boil, then reduce to a simmer.
- Simmer the soup for 20-25 minutes until potatoes are tender.
- In the last few minutes, stir in the chopped kale or spinach, season with salt and pepper, and serve topped with Parmesan.
Notes
This soup is customizable; feel free to add beans or use different greens based on your preference.
