Description

A hearty and satisfying one-pot soup featuring Italian sausage, potatoes, and leafy greens, perfect for weeknight dinners.


Ingredients

  • 1 lb Italian sausage, crumbled
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 4 cups potatoes, diced (Yukon Gold or Russet)
  • 2 cups chicken or vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste
  • Grated Parmesan for serving

Instructions

  1. Prep the ingredients: Chop onion, mince garlic, and dice potatoes.
  2. Heat olive oil in a large pot over medium heat. Add crumbled sausage and cook until browned and crispy.
  3. Add onions and sauté until translucent, then add garlic and cook for an additional minute.
  4. Stir in the diced potatoes and sauté for about 5 minutes.
  5. Pour in the broth, add thyme and oregano, bring to a boil, then reduce to a simmer.
  6. Simmer the soup for 20-25 minutes until potatoes are tender.
  7. In the last few minutes, stir in the chopped kale or spinach, season with salt and pepper, and serve topped with Parmesan.
