- 1 package chicken sausage, sliced
- 2 cups fresh spinach
- 1 can cannellini beans, drained and rinsed
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 onion, diced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Lemon juice for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Sauté onion for 3-4 minutes until translucent.
- Add garlic and sausage; cook until browned.
- Stir in beans and spinach, cooking until spinach wilts.
- Pour in cream; simmer 5 minutes until thickened, seasoning to taste.
- Serve warm, garnished with lemon juice.
Notes
Feel free to substitute chicken sausage for turkey or a plant-based alternative. Frozen spinach can be used if fresh is unavailable.
