Instructions
- Combine Healthy Request Tomato Soup with chopped cucumbers, bell peppers, red onions, and minced garlic in a large bowl.
- Drizzle with olive oil and vinegar, and season with salt and pepper to taste.
- Blend until smooth or chunky, depending on your preference.
- Cover and chill in the refrigerator for at least 60 minutes to allow the flavors to develop.
- Serve chilled, topped with crispy crostini.
