Delightful cupcakes combining tropical flavors of coconut and lime, topped with creamy buttercream.

- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup coconut milk
- Zest of 1 lime
- Juice of 1 lime
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened (for frosting)
- 1–2 tablespoons coconut milk (for frosting)
- Additional lime zest for decoration
Instructions
- Preheat the oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
- Mix flour, baking powder, and salt together in a bowl.
- Cream the softened butter and sugar in another large bowl until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Add the dry ingredients to the wet mixture, alternating with the coconut milk. Stir in lime zest and juice until just combined.
- Divide the batter evenly into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool completely.
- Beat the softened butter for the frosting until creamy. Gradually add powdered sugar and coconut milk until smooth and fluffy. Adjust consistency as needed.
- Frost the cooled cupcakes with the coconut lime buttercream and top with additional lime zest. Enjoy!
Notes
For added coconut flavor, consider using shredded coconut. Use a piping bag for elegant frosting.
