- 1 lb shrimp, peeled and deveined
- 4 cups mixed greens (such as romaine, spinach, and arugula)
- 4 slices bacon, cooked and crumbled
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup blue cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat. Season the shrimp with salt and pepper, then grill for 2-3 minutes on each side until they are opaque and cooked through.
- In a large bowl, combine the mixed greens, avocado, cherry tomatoes, bacon, blue cheese, and red onion.
- In a small bowl, whisk together the olive oil and lemon juice, then season with salt and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Top with grilled shrimp and serve immediately.
