Description

Delicious muffins combining the sweetness of cherries with a light and fluffy base, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cherries, pitted and halved

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, and salt in a mixing bowl.
  3. Mix the melted butter, egg, milk, and vanilla extract in another bowl until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the cherries gently.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

Sprinkle some sugar on top before baking for a crunchy cap. Store in an airtight container at room temperature for up to three days or freeze for up to three months.
