A delightful twist on the classic Italian dish that combines tender pasta layers with chicken, cheese, and nutritious spinach.
Ingredients

- 2 cups cooked chicken, shredded
- 9 lasagna noodles
- 2 cups spinach, fresh or frozen
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 cups marinara sauce
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt & pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the shredded chicken, garlic, Italian seasoning, spinach, and salt & pepper in a bowl.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce.
- Spread half of the chicken mixture over the noodles, followed by half of the ricotta, half of the mozzarella, and some marinara sauce.
- Repeat the layers, finishing with noodles topped with marinara and remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes.
- Uncover and bake for an additional 15 minutes or until the cheese is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
Feel free to add more vegetables like bell peppers or mushrooms for extra flavor and nutrients.
