Description

A delightful twist on the classic Italian dish that combines tender pasta layers with chicken, cheese, and nutritious spinach.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 9 lasagna noodles
  • 2 cups spinach, fresh or frozen
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the shredded chicken, garlic, Italian seasoning, spinach, and salt & pepper in a bowl.
  3. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  4. Layer 3 lasagna noodles over the sauce.
  5. Spread half of the chicken mixture over the noodles, followed by half of the ricotta, half of the mozzarella, and some marinara sauce.
  6. Repeat the layers, finishing with noodles topped with marinara and remaining mozzarella and Parmesan cheese.
  7. Cover with foil and bake for 25 minutes.
  8. Uncover and bake for an additional 15 minutes or until the cheese is golden and bubbly.
  9. Let it cool for a few minutes before serving.

Notes

Feel free to add more vegetables like bell peppers or mushrooms for extra flavor and nutrients.
